What sets your wines apart from others in the Mclaren Vale region?
By Phil Tabor
Mclaren Vale soils are very diverse. So many subregions have a taste of place because of the terroir.
Blewitt Springs stands alone with a growing medium of deep sand over clay and iron stone. The elevation in Blewitt Springs is the highest in the subregions of McLaren Vale. This allows the fruit to be harvested later. Our farming practises are organic / bionamic and we attempt to harvest before the fruit is overripe.
Our winemaking philosophy is low intervention and pro active, rather than reactive. All our fermentations are cold. Approximately 20 degrees centigrade, which takes longer but keeps the integrity of the fruit. All these practises give our wines a distinctive taste and unique style.
